INGREDIENTS:
For the Cake-y part:
1 cup all-purpose flour
2 tsp baking powder
2/3 cup Demerara sugar (or any brown sugar)
2 tbsp. cocoa powder
4 tbsp. butter, melted and cooled slightly
2 large eggs
4 tbsp milk
¾ cup good quality chocolate, chopped
1 cup whole pecans
For the Sauce:
4 tbsp Demerara sugar (or any brown sugar)
3 tbsp. butter
2 tbsp cocoa powder
¼ cup good quality chocolate, chopped
2 cups boling water
TO PREPARE:
1. Preheat the oven to 350 degrees.
2. Butter a medium (say, 6 cup) casserole.
3. In a medium bowl, stir together the flour, baking powder, sugar, and cocoa powder.
4. In a mixing cup, stir the melted butter, eggs and milk together with a fork, then mix into the dry ingredients with a wooden spoon until completely mixed.
5. Stir in the chopped chocolate ad the pecans. Pour the batter into the buttered casserole dish.
6. Sprinkle all of the sauce ingredients (except the boiling water) over top of the batter. Dump the boiling water over the batter and topping and bake in the oven until the cake rises and becomes all toasty, cakey - about 50 minutes.
7. Let cool slightly and serve with excellent quality vanilla ice cream - you're worth it.
